Frugal Fridays: Veggie Broth

Veggie Broth

20121114-130203.jpg

I hate paying for broth. It’s a real money waster. You are really paying for flavored water, but then some would say I don’t have time to make my own.

I collected a days worth of cut ends or nearly dead fresh veggies & threw them in the crock pot. The first time I did it on the stove & got some lightly colored golden broth. But the crock got more from the veggies. It’s a nice dark gold like you buy from the store. I threw them in the crock w/ a bunch of salt, water, and cooked on low for 8 hours.

I have never felt so frugal in all my life. I can’t wait to grab my tasty veggie broth that is full of flavor. It will be tasty. I have done my grandma’s proud!

Frugal Fridays: Homemade Fish Sticks

Homemade Fish Sticks

20121026-180655.jpg

Makes about 36 fish sticks

1 lb. white fish fillets – $2.75
1 C flour (I used whole wheat) – $0.071
3 eggs, beaten – FREE (I have backyard laying hens)
1 C dry bread crumbs (I used homemade dry bread crumbs) – $0.13
1/2 teaspoon salt – $0.01
1/2 teaspoon paprika – $0.04
1 Tablespoon lemon juice – $0.03

Total Recipe Cost: $3.47
Per Fish Stick (makes 36): $0.10

Prep Day: Cut the fish fillets into fish-stick sized strips. I’ve found it’s best to do this when the fish is still partially frozen. Trust me. It’ll make for much smoother cutting. Coat a large baking sheet with non-stick spray. Place the flour in a bowl. Place the beaten eggs and lemon juice in another bowl. Place the dry bread crumbs, salt, and paprika into a third bowl.

Dip each fish strip into the 1.) flour, followed by the 2.) beaten eggs, and finally the 3.) dry bread crumbs.

Place the fish sticks onto the baking sheet, and bake for 15 minutes at 375 degrees, turning half-way through for even cooking. Let stand 2-3 minutes. You can serve warm now or Allow any extra fish to cool to room temperature. Place in a ziplock bag and freeze.

Serve Day: Re-heat from frozen in the oven at 425 degrees for 18-20 minutes.
