I started in February 2008 and the collection of recipes is growing. I’m having a blast discovering minnesota infused recipes or converting our family favorites to be a frozen and/or for clean eating. Once a month I feature a meal swap menu.

Hello, my name is Vanessa Beckett. I’m a married mother of 3. Who loves living in Minnesota, prep ahead cooking, and couldn’t live without them now. No more worries about the age old question “What’s for Dinner?”. I am also transitioning my family into the slow food and clean eating movement. I believe it’s best if we can eat food in it’s most natural state. I love to share the information I have been gaining through this whole experience.

I’m also a trained personal chef. Cooking is a passion and hobby of mine. Hope your are enjoying the content of my blog.

  4. Great site! I have a blog too dedicated to meal planning (not just freezer cooking) and I’ll definitely be adding your site’s link to mine as well. I started a freezer exchange group a couple of years ago and although we ended up discontinuing (lots of reasons), I would LOVE to have another group to join sometime. I can’t imagine cooking anymore without freezer cooking!

  8. Some have had trouble opening documents on our blog. So here’s a short tutorial. You need to click once on the blue menu words like “Sept. 2009 Menu & Recipes” under the date & by Vanessa. Then it will open to another screen. Click once again on the blue menu words “Sept. 2009 Menu & Recipes” right under by Vanessa. It should give you the recipes, pictures, & menus. Sorry it’s not the easiest to navigate. It can’t be helped.

  10. OMG! So happy that I stumbled upon your website! I have planned a large family beach vacation for next month and was wanting to make meal kits ahead of time to take with us, as the house we are renting has a furnished kitchen. I am so excited to put some of these things together. Do you have a top 10 favorite recipe list??

  11. These are my all time favorite’s…Skip’s chicken, Christmas quiche, Chicken marasala, Stromboli, Ritz chicken, BBQ chuck roast,Mexicorn pork chops, Peanut curry flank steak, meatballs with garlic bread, Roasted sticky chicken,And chicken pesto pizza.

  12. Concept here is great but I can’t find any categorized recipes on the page bar on the top. That would help a lot. Trying to pick a category from the right column is hard! Great site! I’m all about clean-eating too and you’ll find that you all feel MUCH better! I’m just getting into freezer make-ahead cooking in preparation for a baby and boy is this a learning curve! Thanks for the site, I hope it gets a little easier to use!! Thanks 🙂
