Bacon Wrapped Meatloaf Patties

Serves 8

3 pounds ground beef, or mix of ground meat – $8.97
1/2 cup Panko bread crumbs – $ .38
2 eggs – free (we have backyard laying hens)
1 tablespoon Worcestershire – $ .28
1 tablespoon honey – $ .14
1/4 cup catsup – $ .59
1/2 cup finely chopped onion – $ .25
2 garlic cloves, minced – $ .5
1 tablespoon Montreal Steak Seasoning – $ .18
1 lb. bacon – $2.49

Recipe total – $13.78
Cost per serving – $1.72

Prep Day: Add a little olive oil to a saute pan. When the oil is sizzling add the onion and the garlic. Turn down the heat and sauté until the onion is soft. If you have time you can go ahead and caramelize it for a more mellow flavor.

Add the ground beef to a large bowl and mix in the cooled sauteed onion and remaining ingredients (except the bacon) with your hands.

Lay two slices of bacon on the counter in an X. Form 1/8 of the mixture into a patty and set it on top of the center of the X. Fold the ends of the bacon over the top. Repeat with remaining meat mixture. Wrap individually and freeze.

Serve Day: Heat olive oil in a heavy skillet on high heat until it sizzles. Lay the patty in the pan with the seam side of the bacon down. Reduce heat to medium. Cook for 7 minutes each side or until the patties are done. Pure Yummy!

Prep Day: For each snack bag, I ended up combining –

1/2 cup organic quick oats – $.07
2 teaspoon powder whey or milk – $.04
1 T. brown sugar – $.04
1/4 teaspoon cinnamon – $.05
Dried fruit – optional

Per Serving: $.20
Total for $2.40 for a 12 count

It takes about a whole 5 minutes to make a whole bunch of these. So fast but will save lots of breakfast prep-time in the future!

Serve Day: When you want to make a packet, dump into bowl just add 3/4 c. of hot water or milk and stir. You could also add dried fruit to make different flavors.

So simple!

Frugal Fridays: Honey Balsamic Chicken Tenders

Honey Balsamic Chicken Tenders

Servings Per Recipe: 4 (3 strips each)

2 medium (1.5 lbs) chicken breasts – $2.99
1/4 cup balsamic vinegar – $0.80
1 clove garlic – $0.08
2 Tbsp olive oil (divided) – $0.24
to taste salt & pepper – $0.05
1 Tbsp butter – $0.10
2 Tbsp balsamic vinegar – $0.40
3 Tbsp honey – $0.33

Total: $4.99
Cost Per Serving: $1.25

Prep Day: Slice the chicken breasts on a diagonal into six strips each. Place the strips in a quart sized zip top bag along with 1/4 cup of balsamic vinegar, one clove of garlic (minced), 1 Tbsp of olive oil, and a pinch of salt and pepper. Mix the ingredients in the bag and freeze.

Serve Day: When you’re ready to cook thaw, heat the second tablespoon of olive oil in a large skillet over medium heat. When the oil is hot, cook the strips until browned on both sides (about 2-3 minutes each side). You may have to do two batches. Place the cooked chicken on a clean plate.

Turn the heat down on the skillet to medium-low and add the butter and last 2 tablespoons of balsamic vinegar to the skillet. Use a spoon to stir the mixture and dissolve the sticky bits off of the bottom of the skillet. Once the mixture has dissolved together, add the honey, increase the heat, and allow the sauce to simmer until thickened (about five minutes).

Once the sauce has thickened, season to taste with salt and pepper (I just used a pinch of each). Add the chicken back to the skillet and toss to coat in the warm balsamic sauce. Serve immediately.
