Frugal Fridays: Cube Steak Parmesan

3 tablespoons all-purpose flour – $.05
1/2 teaspoon salt – $.01
1/4 teaspoon ground black pepper – $.01
2 eggs – free (cause we have backyard laying hens)
2 tablespoons water – free
1/3 cup crushed saltine crackers – $.67
1/3 cup grated Parmesan cheese – $1.12
1/2 teaspoon dried basil – $.37
3 tablespoons vegetable oil – $.18
4 (4 ounce) beef cube steaks – $7.92
1 1/4 cups canned tomato sauce – $.99
2 1/4 teaspoons white sugar – $.02
1/2 teaspoon dried oregano, divided – $.37
1/4 teaspoon garlic powder – $.37
4 slices mozzarella cheese – $.87
1/3 cup grated Parmesan cheese – $1.12

Total = $14.62
Total Per Person = $3.65

Prep Meal Kit: Do not open cube steak. Place in 2 gallon bag.

In a small freezer baggie, combine the saltine crumbs, Parmesan cheese, and basil. Seal securely. Place in 2 gallon bag.

In a small freezer bag, shake together the flour, salt and pepper. Seal securely. Place in the 2 gallon bag.

In a small freezer baggie, place the parmesan cheese and oregano. Seal securely. Place in the 2 gallon bag.

Wrap mozzarella cheese in plastic wrap. Seal securely. Place in the 2 gallon bag.

In a quart-sized Ziploc freezer bag, beat the eggs. Seal securely. Place in the 2 gallon bag.

In a gallon-sized Ziploc freezer bag, place the canned tomato sauce, white sugar, dried oregano, divided, garlic powder to make the pasta sauce. Seal securely. Place in the 2 gallon bag.

In a gallon-sized Ziploc freezer bag, place the spaghetti. Seal securely. Place in the 2 gallon bag.

Insert all bags and chicken into a gallon-size ziploc freezer bag and seal. With a sharpie marker, label the outside of the bag “Cube Steak Parmesan”.

Place in freezer.

Serve Day: Thaw meal kit. Preheat the oven to 350 degrees F (175 degrees C).

In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.

Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.

Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

Serve cube steak parm with pasta on the side

Serving suggestions: Steamed zucchini or a garden salad.

Seafood/Fish:

Lindsey M. – Fish and Chips

6 Cod Fillets
1 cup of mayonnaise
1 cup coarsely crushed kettle chips

Prep Day Directions: Place individually wrapped cod in Freezer bag. Label and freeze. Place mayo in small bag- refrigerate. Crush kettle chips and place in another small bag. Label and place in cupboard.

Serve Day Directions: Thaw cod. Preheat oven to 400F. Arrange fish on a parchment-lined baking sheet. Smear mayonnaise over top of each fillet. Cover completely with crushed chips patting gently. Bake 12-15 minutes, depending on thickness of fish, until fish flakes easily with a fork.

Gretchen – Pesto Crusted Tilapia

6 Tilapia fillets
4 tablespoons pesto sauce
3 tablespoons Italian seasoned breadcrumbs
2 tablespoons parmesan cheese, grated
ground black pepper

Prep Day Directions: Measure and mix breadcrumbs and parmesan cheese. Make and/or measure pesto.

Serve Day Directions: Thaw. Preheat oven to 375 degrees. Cover a baking sheet with foil and coat with non-stick cooking spray. Place fish fillets on baking sheet and sprinkle with black pepper. In a small bowl, combine pesto, breadcrumbs, and parmesan cheese. Divide the topping evenly over the fish fillets, spreading with your fingers and pressing into the fish. Bake for 10 minutes at 375 degrees, then switch to broil to crisp up the crust for the last 2-5 minutes. Fish is done when the middle of the fillet flakes with a fork and is completely opaque.

Poultry:

Vanessa – Chicken Artichoke Pesto Pizza

makes 3 recipes, each serve 6

3 – Knorr dry pesto sauce mix (.05 oz.)
3 packs of 6ct. Greek style pita
1 rotisserie chicken (yields 3 cups of chopped or shredded chicken)
3 – (6 ounce) jar artichoke hearts, drained
3 – (8 oz.) pkgs. shredded pizza cheese

Prep Day: Remove skin and bones from chicken. Chop and Place in 3 small freezer bag evenly. Zip close and place in a labeled gallon freezer bag along with cheese and pita. Zip close and freeze. Label a quart size Baggie, put in pesto mix and jarred artichoke hearts. All will be assembled later into a pizza at a later date.

Serve Day: Thaw for stuff. Prepare pesto according to package. Spread pesto sauce over the pizza crusts. Arrange chicken pieces and artichoke hearts over the sauce, and sprinkle with cheese. Bake according to pita package directions. I like my when my cheese is melted and lightly browned at the edges. You can fold over and eat as a pizza pocket too.

Beef:

Keri – Beef Dip Sandwiches

2.5 lbs beef chuck roast
1-1/2 tsp minced garlic
1-1/2 tsp dried rosemary
2 bay leaves
1/2 cup soy sauce
3 cups water French rolls (or hamburger buns)
Provolone Cheese (optional)

Prep Day Directions: Place all ingredients except the water into a gallon sized freezer storage bag. Seal and freeze.

Serve Day Directions: Defrost completely. Place contents into slow cooker and add 3 cups water. Cook on low setting for 6-10 hours (the longer the better!) Top with provolone cheese (optional, but provided). We like to use the juice in the slow cooker for dipping the sandwiches!

1 Lb. Flank steak,thinly sliced against the grain
1 onion, thinly sliced
2 red bell peppers,seeded and thinly sliced
1 jalapeno,seeded(if desired) and thinly sliced
1t. chili powder
1t. hot sauce(i use Frank’s Red Hot)
kosher salt

4t. olive oil
8-8″ flour tortillas,warmed
salsa
sour cream
guacamole

Prep Day: In a large bowl,combine the steak,onion,bell peppers,jalapeno,chili powder,hot sauce, and 3/4t. salt. Place in freezer bags. Freeze until ready to cook,up to 3 months.

Serve Day: In a large skillet,over medium heat,heat the oil. Empty the frozen contents of the bag into the skillet. Cook,covered,stirring occasionally to break up ingredients,for 10 minutes. Raise heat to medium-high and cook,uncovered,until the vegetables are tender and the steak is cooked through,2-6 minutes. Serve with the tortillas and the salsa and sour cream and guacamole,if desired.

Heather G. – Veggie Lasagna

No Bake Lasagna noodles
onion chopped
Garlic minced 3 cloves
Spinach chopped- can be frozen or fresh
Salt and Pepper
Ricotta or cottage cheese
Mozzarella chesse shredded
Oregano,basil, parsley,
Chopped mushroom, broccoli,zucchini
Parmesan cheese
Tomato sauce

Prep Day Directions: Cook onions and garlic in a little oil. Add spinach cook season with Salt and pepper. Add ricotta, mozzarella. Stir together and set aside. Cook the broccoli, mushroom and zucchini add herbs. Set aside. Layer tomato sauce – Noodles – Spinach and cheese – Cooked Veggie, Repeat. Top with Cheese.

Serve Day Directions: Defrost, Bake on 400 covered for 30-40 minutes. Check after 30 minutes. Needs to be warm all the way through. Serve.

Megan – Pesto Grilled Cheese Sandwiches

12 slices good Italian bread
6 tablespoons softened butter, divided
6 tablespoon prepared pesto sauce (we’re using pesto rosso for this but you can do either – my husband loves the flavor of this with grilled cheese so hopefully you will too)
6 slices provolone cheese
6 slices American cheese
Box of tomato soup

Prep Day Directions: Spread one side of a slice of bread with butter Spread the top of the bread slice in the skillet with half the pesto sauce, and place a slice of provolone cheese and the slice of American cheese onto the pesto. Spread remaining pesto sauce on one side of the second slice of bread, and place the bread slice, pesto side down, onto the sandwich. Butter the top side of the sandwich. Place all sandwiches in large two gallon freezer bag and separate by using wax paper.

Serve Day Directions: Thaw Preheat oven to 400 degrees F Arrange sandwiches on baking sheet Bake in preheated oven on the bottom rack for 6 to 8 minutes. Flip the sandwiches and bake for another 6 minutes. They will brown on the bottom so you would have to keep an eye on them using this method. It’s a quick way to have them all cooked at once for you. You can also do whatever is most convenient for you, frying ect. Prepare soup based according to directions on box.

Pork:

Ann – Brown Sugar Glazed Pork Chops

5 pork chops
1/3 C. brown sugar
1/8 t ground red pepper
1/2 t garlic powder
1/2 t paprika
Salt & pepper to taste (I left this out for the swap, so everyone can season as they want.)

Prep Day Directions: Make-ahead Instructions: Add last 5 ingredients to a ziploc bag and shake to mix. Rinse pork chops and add to bag. Shake until pork chops are coated. Squeeze out all of the air and freeze flat.

Serve Day Directions: Prepare Instructions: Thaw completely in fridge. Place each pork chop on a foil-lined baking sheet and cook at 350 until done (20-25 minutes.)

Heather T. – Crockpot Island Pork

3lbs pork roast cut into bite size pieces
1 orange, peeled and cut into pieces
1 can (14oz) crushed pineapple
2T soy sauce
1/2 t ground cloves
1/4 t pepper
2T cornstarch
2T water
2 cups brown rice

Prep Day Directions: Place ingredients in a 1-gallon size zip lock bag. Seal bag. Squish the ingredients together and freeze.

Serve Day Directions: Dump frozen contents of bag into crockpot and cook on low for 8 hours. Cook the rice according the directions enclosed in the bag. Serve over brown rice.

Your Choice

Kristine: Sun-dried Tomato Chicken Pasta

2 1/2 c. diced chicken
2 c. fresh spinach
1 T chopped garlic
1 c. julienned sundried tomatoes
1 1/2 c. shredded mozzarella cheese
1 jar sundried tomato alfredo sauce
1 box bowtie pasta

Prep Day Directions: Put all measured ingredients into a freezer bag and seal!

Serve Day Directions: Thaw bag of mixed ingredients. Cook pasta according to package directions, then drain. In a large pot combine pasta, jar of sauce and bag of ingredients. Cover and cook on medium-low, stirring occasionally, until chicken is hot, spinach leaves are wilted and cheese is melted! Enjoy!

Kellie: Cheesy Broccoli Chicken Foil Packets

1 package Stuffing mix; chicken flavor
1 1/4 cups Water
6 Boneless skinless chicken breast halves (6oz. each)
6 cups Broccoli Florets
1 1/2 cups Shredded cheddar cheese
6 slices Cooked bacon; crumbled (I used the already cooked bacon from Sam’s Club)
6 tbsp Ranch dressing, divided

Prep Day Directions: Spray 4 large sheets of heavy-duty foil with oil. Combine stuffing mix and water. Spoon 1/4 of the stuffing mixture onto the center of each foil sheet. Top stuffing with a 6oz. chicken breast half. Top chicken with 1 c. broccoli. Sprinkle with 1/4 of the cheese and 1 slice of bacon, crumbled. Drizzle with 1 T. ranch dressing. Bring up foil sides and fold to seal, leaving room for heat circulation inside.

Add’l Prep Day Directions: To freeze, I first froze each packet seperately and then the next day put them all in a gallon size ziploc bag.

Serve Day Directions: Thaw packets in fridge. Heat oven to 400 degrees and place packets on a cookie sheet and cook for 35 to 40 minutes. Remove packets and let stand 5 mins. Cut sits in foil for steam before opening. As a heads up, each packet that I made has a separate bottom and top piece of foil.

North American/European

Erin: Weeknight Red Beans and Rice

1 medium onion, diced 1 bell pepper, diced
3 stalks celery, diced
1 lb. smoked turkey sausage, sliced
1/2 tsp cayenne (I used 1/4 tsp)
1 tsp cajun seasoning
1 bay leaf
1 tsp minced garlic
1 can diced tomatoes
2 cans kidney beans
salt, pepper, hot sauce to taste

Prep Day Directions: Heat 2 Tbsp oil in large non-stick pan or Dutch oven. Add diced onion, bell pepper, celery, and garlic. Saute until tender. Add sliced sausage and sauté until heated through and slightly browned. Add cayenne, cajun seasoning and bay leaf. Continue to stir and sauté about 3 min. Add diced tomatoes and beans (do not drain). Let cool and place in labeled freezer bag. Put 1 cup rice into labeled bag.

Serve Day Directions: Thaw and heat up on stovetop. Add salt, pepper, and hot sauce to taste. Simmer about 15 minutes. Remove bay leaf. Serve over rice Simmer rice 15 minutes in 2-1/2 cups water.

Emily: French Market Sandwiches

Makes 12 sandwiches

12 plain buns
1 cup butter, room temp
1/4 cup prepared mustard
1/2 teaspoon poppy seed
2 tablespoons finely minced shallots
2 lbs shaved ham
12 slices Swiss cheese

Prep Day Directions: Slice croissants in half horizontally. Mix butter, mustard, poppy seeds and onion together. Spread on half of each croissant. Top with 2 1/2 slices of ham and a slice of cheese. Put halves together. Wrap each sandwich in foil to be frozen or made fresh. To make from fresh warm wrapped sandwich in 350 F oven for 15 minutes.

Serve Day Directions: No need to thaw. Unwrap and put on cookie sheet. Bake at 325F for 25 to 30 minutes or till cheese is melted.

Italian/Mediterranean

Heather: Chicken Pesto Pizza

1 Pillsbury Thin Pizza Crust (15″x10″)
1/4 cup pesto 2 cups rotisserie chicken
1/2 cup black beans
3/4 cup diced tomatoes
2 cups mozzarella cheese

Prep Day Directions: De-bone rotisserie chicken and place in bag. Measure pesto into bag. Measure black beans and tomatoes into bags. Place all bags, plus pre-packaged bag of mozzarella cheese, into freezer bag. Freeze.

Serve Day Directions: Heat oven to 400 degrees. Grease 15″x10″ or larger cookie sheet or pan. Unroll dough onto cookie sheet. Prebake dough 5 minutes. Spread with 1/4 cup pesto. Top with chicken, black beans, diced tomatoes and cheese. Bake 6 to 10 minutes longer – until cheese is melted and crust is golden. Enjoy!

Asian/Indian

Bridget: Asian Pork Chops

5 tablespoons soy sauce
5 tablespoons honey
1 1/2 tablespoon lemon juice
1 1/2 tablespoon olive oil
4 garlic cloves, minced
1 teaspoon ground ginger
6 boneless pork loin chops (1/2 to 3/4 inch thick)

Prep Day Directions: In a large resealable plastic bag or shallow glass container, combine the first six ingredients. Add pork and turn to coat. Seal or cover.

Serve Day Directions: Drain and discard marinade. Grill, uncovered, over medium heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving.

Andi: Steak Stir Fry

Cole slaw mix-16 ounce bag
6-8 ounces baby bella mushrooms
2 Tablespoons canola oil
1/2 pound stew meat
1 Cup Rice
1/4 cup cilantro, chopped-optional

Sauce
1/2 cup soy sauce
1/2 cup brown sugar
1 teaspoon ground ginger
1/2 teaspoon Sriarcha chili sauce
1 teaspoon garlic powder
1 Tablespoon sesame oil
1 Tablespoon rice vinegar

Prep Day Directions: Combine all sauce ingredients together in a small bowl and pour in bag with meat. Seal bag Add mushrooms to veggie mix in another large freezer bag. Bag rice Place meat bag and rice bag in large freezer bag with veggies. Freeze

Serve Day Directions: In a large wok or skillet heat oil over medium-high heat. Salt and pepper the steak pieces and saute for 3 – 4 minutes. Remove meat from the pan and set aside in a bowl. Do not clean pan! Add another tablespoon of oil to the pan and saute mushrooms and cole slaw for a minute. Add meat and sauce back in just to warm. Serve over rice and garnish with chopped cilantro(optional)

Southwestern/Latin American

Kirsten: BBQ Chicken Quesadillas

1.5 lb shredded chicken
18 oz BBQ sauce
1 small red onion, chopped
1 c chopped cilantro
1 1/2 c shredded Colby jack
12 large flour tortillas
Garlic salt for baking chicken
Oil (you provide)

Prep Day Directions: Bake chicken seasoned with garlic salt for 20 minutes at 325. Meanwhile, chop onion and cilantro and mix. Put in a freezer bag. When chicken is done, shred in food processor and mix with BBQ sauce. Put in a separate freezer bag. Bag tortillas and cheese separately as well.

Serve Day Directions: Thaw bags completely. Mix chicken bag and onion/cilantro bag and heat in microwave or in a large pan on the stovetop. Put a large heap of mixture on one half of a tortilla and sprinkle with cheese, fold over and cook in frying pan with oil. Top with sour cream, guacamole and lettuce!

Lisa: Beef Fajitas

1.5 lb. beef (Top Sirloin) , cut into strips
1 onion, sliced 2-3 bell peppers, sliced. I Used Trader Joe’s frozen peppers.
1 teaspoon of garlic
1/4 cup lemon juice
1 teaspoon chili powder
1/4 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
2 Tablespoons veg oil to Saute ( you provide)
1.5 c. Shredded Cheddar Cheese.
12 Fajita Sized Tortillas.

Prep Day Directions: Bag separately – 1. Meat and seasoning, 2. Peppers 3. Onions 4. Shredded cheese. 5. Tortillas > > Fit # 1 – 4 into one Labeled Gallon Size Bag. Label Tortillas as # 2

Serve Day Directions: Thaw in the refrigerator. Saute meat mixture. Add onions near the beginning. Add peppers about ½ way > through cooking. > > Warm tortillas. Serve with Cheese.

Soups/Stews

Nicole: Ham and Pea Soup

Serving Size: 8

7 cups water
1 package (16 ounces) dried split peas (2 1/4 cups), sorted and rinsed
1 teaspoon salt
1/4 teaspoon pepper
3 medium carrots, cut into 1/4-inch slices (1 1/2 cups)
2 medium stalks celery, finely chopped (1 cup)
1 medium onion, chopped (1/2 cup)
3 cups of cut up ham

Prep Day Directions: Add salt, pepper, carrots, celery, onion and ham to freezer bag.

Serve Day Directions: Rinse and sort peas. Soak peas for quicker cooking time. Add peas and freezer bag to crock pot. Add water to crock pot.

Ashley: Italian Sausage and Potato Soup

1 lb Italian Sausage
8 cups Chicken Broth
1 can Cannellini Beans
1 can Diced Tomatoes
2 cups Diced Potatoes
1 Bay Leaf

Prep Day Directions: Cook sausage in a skillet. Combine all ingredients into freezer bag. Freeze.

Serve Day Directions: Thaw completely. Heat until potatoes are cooked. About 30 minutes. Remove bay leaf before serving. Serve with crusty bread.
