Sunday Brunch: Apple Cheese Danish

Apple Cheese Danish

1 package (7.5-ounce) farmer cheese
1/3 cup sugar
1 egg
1 teaspoon vanilla extract
1/4 teaspoon salt
2 medium Gala apples, peeled, cored, and thinly sliced
1 teaspoon lemon juice
2 teaspoon sugar, for apple mixture
1 sheet frozen puff pastry, thawed, cut into 3 strips, then cut in half widthwise
Sugar, for sprinkling

Prep Day: Combine farmer cheese, 1/3 cup sugar, egg, vanilla extract, and salt in a medium bowl.

Toss apples with lemon juice and 2 teaspoons sugar. Set aside.

Preheat oven to 400°F. Roll each pastry strip to a 6-inch square. Divide cheese mixture among squares. Top with apples, layering slices.

Fold in 2 opposite corners of dough to meet in middle of pastry. Sprinkle with sugar. Transfer to parchment-lined baking pan. Bake until golden, 20 to 25 minutes.

Freeze when cooled or serve when cooled. For freezing wrap individually parchment and place in freezer bag.

Serve Day: thaw and serve.

Side Dish ‘n’ Saturdays: Potato Cheese Casserole

Potato Cheese Casserole

4 lbs potatoes
1/4 lb butter
1/4 cup milk
1/2 lb cream cheese, softened
1/2 cup shredded cheddar cheese
1/2 cup romano cheese or 1/2 cup parmesan cheese, grated
1 green pepper, chopped fine
1 small onions, minced or 1/2 cup snipped chives
1 teaspoon white pepper

Prep Day: Steam spuds until tender. Peel and mash. Melt butter add milk and all remaining ingredients. Mash well and beat until fluffy. Pour into casserole dishes and freeze.

Serve Day: thaw and bake uncovered in a 350 oven for 1 1/2 hours. You want it browned and bubbly.

Frugal Fridays: Finger Licking Chicken Marinade

Finger Licking Chicken Marinade

Makes 2 cups (for 6 + pieces chicken)

1 cup oil – $.55
1/2 cup vinegar – $.25
2 tablespoons Miracle Whip – $.20
3 tablespoons Worcestershire sauce – $.15
2 tablespoons lemon juice – $.10
1 tablespoon salt ( to taste) – $.02
1 tablespoon pepper – $.02
2 tablespoons thyme – $.05
1 tablespoon garlic salt – $.05
6-8 pieces of chicken – $8.49

Total Cost – $9.88
Cost Per Serving – $1.65

Prep Day: Whisk together all ingredients in a small bowl. (If using right away marinate chicken pieces at least 30 minutes and then to baste the meat as it cooks in the oven or over hot coals.) Pour into gallon freezer with chicken. Squish mix around and freeze.

Serve Day: Thaw chicken in mix. Grill according to package or till chicken 165F.
