Teriyaki Meatballs and Rice

MEATBALLS
1 lb. ground pork – $3.50
1 large egg – $.23
1/2 cup plain breadcrumbs – $.17
1 clove garlic, minced – $.07
2 inches fresh ginger – $0.52
1/2 tsp soy sauce – $.02
2 whole green onions – $.25
10-15 cranks freshly cracked black pepper – $.05

TERIYAKI GLAZE
1/2 cup soy sauce – $.48
1/2 cup brown sugar – $.12
1/2 cup water $0.00
1/2 Tbsp toasted sesame oil – $.28
1 Tbsp rice vinegar – $.04
2 inches fresh ginger – $.52
2 Tbsp corn starch – $.12
1 Tbsp sesame seeds – $.17

RICE BOWL
2.5 cups dry jasmine rice – $1.10
3.75 cups water – $0.00
2 whole green onions – $.25

Prep Day: Preheat the oven to 400 degrees. Place the ground pork in a large bowl. Peel the ginger and then grate it using a small holed cheese grater into the bowl. Mince the garlic, slice the green onions, and add them to the bowl. Also add the egg, breadcrumbs, soy sauce, and black pepper. Mix these ingredients really well until it is all evenly combined (clean hands work best).

Cover a baking sheet with foil. Roll the meatball mixture into small balls, about one tablespoon each. You should yield about 30 meatballs. Place the meatballs on the baking sheet as you roll them. Bake in the preheated oven until golden brown (about 35-40 minutes).

While the meatballs are in the oven, begin cooking the rice according to the package directions: Place the rice and water in a medium pot, cover, and bring to a rapid boil over high heat. As soon as it reaches a full boil, turn the heat down to the lowest setting. Allow to simmer on low for 20 minutes, then turn the heat off and let the rice rest, undisturbed, until the rest of the meal is complete. The rice will continue to steam even after the heat is turned off, so don’t remove the lid.

While the meatballs are in the oven, also prepare the teriyaki glaze. In a medium pot combine the soy sauce, water, brown sugar, rice vinegar, and sesame oil. Peel and grate the ginger into the pot. Heat over a low flame until the brown sugar is dissolved (just a few minutes).

Dissolve the cornstarch in just enough water to make it pourable. Pour it into the pot with the glaze ingredients. Turn the heat up to medium high, stir and cook until thickened. It should thicken as soon as it begins to simmer. Once thickened, add the sesame seeds.

To Freeze: Cool meat balls and bag on 2 gallon freezer bag. Package rice in steamer bags and place in freezer bag with meatballs. Package the glaze up and place in 2 gallon bag. Seal, label and freeze.

Serve Day: Thaw everything. Place the meatballs in a crockpot with glaze. Stir to coat. Heat on low for a couple of hours until hot. When meatballs are ready, place the rice in microwave and cook 4-6 minutes. Build the bowls by placing one cup of rice in a bowl, Fluff the rice with a fork, add five meatballs and a couple of spoons of extra teriyaki glaze, then sprinkle a few sliced green onions over top.

Happy Labor Day! Bacon Wrapped Cheese Dogs

Bacon Wrapped Cheese Dogs

8 hot dogs
1/2 cup shredded Colby or pepper jack cheese
16 slices bacon, pre-cooked (I use Hormel fully cooked bacon that goes in microwave usually)
8 hot dog buns, toasted

Prep Day: Slice each hot dog lengthwise down the middle almost, but not all the way through. Fill the pocket with a little shredded cheese. Wrap the hot dog with two slices of thin-sliced, pre-cooked bacon. Secure bacon with toothpicks if necessary. Place in freezer bag, place wrapped buns in same bag, and freeze.

Serve Day: Thaw. Preheat oven to 450º. Bake approximately 10 minutes until cheese is melted and bacon and hot dog are hot. Toast buns at the same time.

1 cup Italian seasoned breadcrumbs – cost $1.15
2 teaspoon pepper – cost $.08
1 teaspoon salt – cost $.01
16 chicken tenders (about 2 lb.) – cost $4.98
2 tablespoon butter – cost $.12
2 tablespoon olive oil – cost $.23
16 Slices of deli ham, cut into thin strips – cost $1.50
8 Swiss cheese slices, halved – cost $1.24

Prep Day: Combine breadcrumbs, pepper, and salt in a large zip-top plastic bag. Rinse chicken tenders, and add to freezer bag. Seal bag, and shake to coat. Place parchment paper on cookie sheet and place coated chicken on sheet and freeze for a few hours. Once frozen place in new freezer bag along with packaged cheese and bacon.

Serve Day: Thaw. Melt butter with oil in an ovenproof skillet over medium heat. Cook chicken 3 1/2 to 4 minutes on each side or until done. Arrange Canadian bacon strips over chicken in skillet, and top each with 1 cheese slice. Broil 5 1/2 inches from heat 2 minutes or until cheese is melted.
