I’m a married mother of 3. Who loves living in Minnesota, prep ahead cooking, and couldn’t live without them now. No more worries about the age old question “What’s for Dinner?”. I am also transitioning my family into the slow food and clean eating movement. I believe it’s best if we can eat food in it’s most natural state. I love to share the information I have been gaining through this whole experience. I’m also a trained personal chef. Cooking is a passion and hobby of mine. Hope your are enjoying the content of my blog.

  1. 6/7 – Frozen Strawberry Daiquiri Pie: My favorite summer pie. Oh so good. We are thankful Jessica introduced us to this great pie!!!!

6/9 – Beef Kabobs: Thanks again Kimber for this wonderful recipe. You could add small red potatoes if you don’t like mushrooms. Just slice potatoes in half, then prick all over and microwave 5 min., after that you can add them to the skewers to be grilled. Yummy!

  2. Thanks for the great recipe suggestions! Can you post the amount of chicken used for the Chicken Black Bean Corn Quesadillas? Looks like it got left out.

  3. You can add if you want 4 to 6 (4-ounce) skinned and boned chicken breast halves, cut into thin strips.

  4. The chicken I added was finely chopped. It may have blended in with the rest of the mixture because of this.
