I’m a married mother of 3. Who loves living in Minnesota, prep ahead cooking, and couldn’t live without them now. No more worries about the age old question “What’s for Dinner?”. I am also transitioning my family into the slow food and clean eating movement. I believe it’s best if we can eat food in it’s most natural state.   1. Had the Italian Sausage and Potatoes tonight. I thought maybe the potatoes would have turned to mush when thawed- then warmed up, but they held up. Great Meal!! Thanks!

    Gnocchi bake was awesome Erin (as always). I didn’t thaw mine completely,so I cooked it longer, ended up-over cooking the gnocchi a bit.So don’t make the same mistake I did!! :0)
    The quanity was so much we had it for lunch the next 2 days! Thanks Great meal.

  2. Wow! Lots of great meals this month! It’s usually hard to please everyone in our family, but we all enjoyed the Mexican Tortas and you can never go wrong with a marinated flank steak. I, myself, enjoyed them all.

  3. Coconut Crusted Tilapia with Apricot Dipping Sauce was quite spicy and tasty, next a little less spicy and I would deep fry it or pan fry it. Found that baking still left it soft and battery. Great Flavor combination. 5/11

  4. Sorry to say Gnocchi Bake was not a fan favorite in our house. Not enough ingredients to make it flavorful and gnocchi should be firm not mushy. Sorry Erin. I usually love your dishes.

  6. I liked the samosa. The Italian Sausage and Potatoes recipe was a lot of cutting and baking for a large group. Would make it again if just doubled or tripled.
