I’m a married mother of 3. Who loves living in Minnesota, prep ahead cooking, and couldn’t live without them now. No more worries about the age old question “What’s for Dinner?”. I am also transitioning my family into the slow food and clean eating movement. I believe it’s best if we can eat food in it’s most natural state. I love to share the information I have been gaining through this whole experience. I’m also a trained personal chef. Cooking is a passion and hobby of mine.   1. The Bruschetta Chicken was awesome. I really loved the assembly too!

    Apricot Pork Chops were good too. I liked that it was the perfect amount of seasoning. I was expecting more of a fruity syrup but glad that that was not how it turned out. I shared the recipe with multiple people too. You can’t go wrong with only three ingredients!

    My daughter snacked on a tortilla while I was cooking the Chimichangas so we were short one when it came time to assemble. The meat tasted a little bland to me. I don’t know if it’s bc I was overfilling the tortillas being short one? and it was just too much meat for my liking? Suggestion might be too top with salsa and/or sour cream if it’s not seasoned enough for you. When I was preparing it for the group, there was a lot of seasoning and other mix ins going in there but just a head’s up. I hope they’re not too bad.

  2. We loved the Irish Beef Handpies! I’m sure they were a lot of work to assemble but they turned out really well! I loved that we could grab however many we needed and leave the rest in the freezer! I served with even more potatoes and carrots that I roasted in the oven at the same time.

    Beef Stir Fry with Rice Noodles was also great – a good way to eat lots of veggies because they were covered in flavorful sauce! My rice noodles stuck together for some reason so we added some more soy sauce for extra liquid.

    Po’ Boy Sandwiches were really good! The sauce without the mayo was really powerful, so the 2nd day we mixed it in with some mayo and it was amazing. But then we had lots of sauce leftover, though, and wasn’t sure if I could refreeze?

  3. Wild Rice soup was delicious. Great flavor and I will be making this recipe again.

    Bruschetta Chicken was a hit and so easy to make. loved it!

    enjoyed beef stir fry, lots of veggies and I think I over cooked the noodles as mine stuck together too.

  4. Red curry shrimp, irish hand pies (do not thaw if they touch, bruschetta chicken, chimicihangas were all great. Apricot pork chops were okay for our family. Still have not made the rest yet.

  5. Irish beef hand pies were really good! Hubby and I also really liked the catfish po boys. The tarragon chicken was good, I grilled it instead of broiling. Cooked the orzo in chicken broth and tossed in some Parmesan and fresh basil, yum!
