I’m a married mother of 3. Who loves living in Minnesota, prep ahead cooking, and couldn’t live without them now. No more worries about the age old question “What’s for Dinner?”. I am also transitioning my family into the slow food and clean eating movement. I believe it’s best if we can eat food in it’s most natural state. I love to share the information I have been gaining through this whole experience. I’m also a trained personal chef. Cooking is a passion and hobby of mine. 1. A note for the Sweet and Sour Pork recipe that I made: I am giving you
the can of pineapples to add near the end of the time in the slow
cooker.  I would suggest only adding the pineapple chunks and not
adding the juice.  When I made it I didn’t think it needed any extra
juice.  My husband loved it and I hope you do too. —Erica

  2. Crispy Cheddar Chicken was really good. We made the sauce but didn’t need it bc the chicken was good enough on it’s own. I have actually been wanting to make this recipe so I’m so glad it was tried here!

French Market Sandwiches are great as usual. So nice to have something on-hand that can be baked from frozen.

Mediterranean Turkey Burgers were good. Good enough to eat without the bun!

Spinach Pie was good but…spinach-y. I was the only one who ate it so it was a lot of spinach for just me. but WATCH OUT I’m Popeye strong!

Sweet and Sour Pork Roast was ruined because the outlet the crockpot was plugged into malfunctioned. It was warm when I left the house but 6 hours later was cold and raw and I had no idea how long it had been sitting there. On a good note, I still have the can of pineapple!

Zuppa Toscana was great and loved by the whole family. Thanks for all the extra bagging so it didn’t leak!

  3. beef strips were great!

Spicy Thai Coconut Chicken Soup was great. i put it over wild rice since i’m not a big broth fan. it was great. excellent taste! and my daughter loved the bite-size pieces of chicken!

  4. Loved the Beef Strips and Crispy Chicken!

Wished the Zuppa Toscana had the cream in a separate bag. By the time the potatoes were cooked, it was not very creamy. But still was good.

The spinach pie was too spinachy for us also. Think less spinach with another vegetable would have been good.

Sweet and Sour pork good and lots of it.

  5. Winners at our hands down this month were crispy chicken, turkey burgers, French market sandwiches, and vodka shrimp.

  6. Favorites at our house:
Toscana soup, French Market sandwiches and the beef strips! Still haven’t had the Vodka Shrimp, hoping to have it soon.

  7. Love the French Market sandwiches! Crispy chicken was good without the sauce. Husband really liked the honey pork chops. Tossed the shrimp with some spaghetti for a yummy pasta dish.
