1 boneless Pork Loin Roast, cut into 6-8 chops – $8.50
3 tablespoons sweet paprika, preferably Spanish – $.05
1 tablespoon freshly ground black pepper – $.02
1 tablespoon coarse salt, either kosher or sea salt – $.02
3/4 teaspoon sugar – $.01
3/4 teaspoon chili powder – $.01
3/4 teaspoon granulated garlic or garlic powder – $.01
3/4 teaspoon onion powder – $.01
1/4 to 1/2 teaspoon ground cayenne – $.01

Total Cost – $8.64
Per Serving Cost – $1.44

Prep Day: Label freezer bag. Mix up all the spices. Rub spices on all sides of pork chops. Let marinade for 1-2 hours before freezing.

Serve Day: Thaw and grill.

Frugal Fridays: Chicken Tomato Fettuccine

Chicken Tomato Fettuccine

1 lb ground chicken – $2.50
1 large onion, chopped – $.89
2 – 14oz cans crushed tomatoes – $4.18
2 tsp oregano – $.02
1 tsp sugar – $.01
1 tsp salt – $.01
8 oz whole wheat or vegetable fettuccine noodles – $3.39
2 cups mozzarella cheese – $3.79

Total Cost – $14.79
Cost Per Serving – $2.47

Prep Day: Spray large skillet with non stick cooking spray and brown ground chicken with onion until no pink remains and onion is softened. Add tomatoes, oregano, sugar and salt to frypan and stir to combine. Pour into freezer container, allow to cool, and freeze.

Serve Day: Thaw chicken fettuccine sauce overnight in refrigerator. Preheat oven to 350F while cooking the fettuccine noodles according to instructions on package. Place fettuccine in the baking dish, pour thawed sauce over top and bake, uncovered, 45 minutes (you can reduce cooking time to 30 minutes if you heat the sauce on the stove top while you are cooking the noodles).

Sprinkle cheese on top of dish then cook for 5-10 minutes or until cheese melts and is bubbly.

2 lbs. smoked sausage – $9.18
2 green bell peppers – $2.78
1 large onion – &.89
2 T balsamic vinegar – $.13
2 t course brown mustard – $.02
1 t Italian seasoning – $.01
Salt & pepper to taste – $.01

Total Cost – $13.02
Per Serving Cost – $2.17

Prep Day: Slice sausage into 1 inch pieces. Place in zipper bag. Slice peppers and onion into bite size pieces. Add to zipper bag. Pour the next 3 ingredients into the zipper bag. Sprinkle with salt & pepper. Zip and mix around to coat everything. Freeze now if you want to.

Serve Day: Thaw. Pour sausage mixture onto baking sheet lined with foil and sprayed with non stick spray. Bake 400 degrees 20-25 minutes.
