Raspberry-Chocolate Chip Frozen Yogurt

8 servings, 1/2 cup each (1 quart)

3 cups fresh or frozen (not thawed) raspberries
2 cups low-fat plain yogurt
1/3 cup sugar
1 1/2 teaspoons vanilla extract
1/2 cup chocolate chips, preferably mini

Place raspberries, yogurt, sugar and vanilla in a food processor and process until smooth.

No Ice Cream Maker Needed! Pour the mixture into a 9-by-13-inch pan and place in the freezer. Stir every few hours, until the mixture is firm along the edges and semi-firm in the center, 2 to 6 hours (using frozen berries will shorten the freezing time). Transfer to a food processor and process until smooth. Transfer to an airtight container, stir in chocolate chips, cover and freeze until ready to serve.

Store in an airtight container in the freezer for up to 1 week. Let stand at room temperature for about 30 minutes before serving.

Tasty Treat Thursdays: Peaches ‘n’ Cream Freezer Pie

Peaches ‘n’ Cream Freezer Pie

Pie
2 cups gingersnap crumbs
⅓ cup butter, melted
4 cups vanilla ice cream, slightly softened
2 cups fresh peaches, peeled and coarsely chopped
1 teaspoon almond extract
Almond Brittle

¼ cup butter
½ cup sugar
2 tablespoons corn syrup
1 ½ cup slivered almonds

Combine cookie crumbs and butter. Line a standard loaf pan with plastic wrap. Press crumb mixture into pan.

Combine ice cream, peaches and extract until well mixed. Spoon over crumb mixture. Freeze for several hours.

In a heavy saucepan, combine all brittle ingredients. Stir constantly over medium heat until mixture is bubbly and almonds are lightly browned.

Spoon onto a lightly greased baking sheet. Set aside to cool.

When pie is fully frozen, turn out and slice onto serving plates. Sprinkle with almond brittle.

Raspberry Cheesecake Ice Cream

3 ounces cream cheese, softened to room temperature
1 cup sugar
1 1/2 cups puréed, strained raspberries
1 cup whipping cream
1 cup whole milk

In a large bowl, whisk cream cheese until smooth; add sugar and continue whisking until combined. Whisk in raspberries, followed by cream and milk until fully incorporated.

Pour mixture into ice-cream maker; process according to manufacturer instructions.
