Note to Wednesday PM Group: Please remember to bring your food in a cooler frozen and your 2 September recipes to be voted on at the August swap. If you are not going to be at the August swap make sure Nicole gets your 2 September recipes. Also please do not forget to submit your voted on recipe to me by the Monday before the swap. You can now do that here on our blog.

Note to Friday AM Group: Make sure to email me 2 recipes from your assigned category above with title of recipe with ingredients list and maybe a brief descriptions if it needs one by Sunday 8/5/12. Please be looking for a survey in your email on Tuesday 8/7/12 to vote on our September menu since we will not be meal planning at our exchanges to save on time. You will have 5 days to vote on menu. Once Fridays menu is published you are welcome to start cooking for the September meal swap. Also please do not forget to submit your voted on recipe to me by the Monday before the swap. You can now do that here on our blog. Looking forward to our first exchange together!

For Sunday Brunch: Copy Cat Egg McMuffins

12 Sandwiches

12 English Muffins
12 Large eggs
12 Slice American Cheese
12 Slices Canadian Bacon
Butter

Prep Day: Lightly oil a muffin tin and crack an egg in each tin. Bake the muffin tin with eggs in a 350 degree oven for 10-15 minutes. Depending on your egg size, start checking them early to make sure they are cooked through. Try not to overcook them! Slice all the muffins and toast them in the oven for 10 minutes. Butter after toasting. Add an egg, cheese, and bacon.

If you want to eat one right away, I recommend sticking it in the oven as a sandwich for 5-10 minutes to melt the cheese and everything.

To Freeze: You can also stick all your sandwiches on a baking sheet and stick it in the freezer. Leave them in the freezer until they are frozen, about an hour. Then wrap each sandwich individually in foil and store all the individually wrapped sandwiches in a freezer safe bag.

Serve Day: When reheating, you can microwave if you’re in a hurry, but it’ll make the muffin soggy. If you can plan ahead a bit, bake the sandwich at 350 degrees for about 25 minutes. You can even keep it wrapped in the foil if you used to freeze the sandwiches.

Side Dish’n Fridays: Lemon Rice

Lemon Rice

Adapted from 30 meal in one day

6 servings

1 cup rice
1 teaspoon butter
1 teaspoon minced garlic
1 teaspoon grated lemon peel
1/4 teaspoon pepper
2 cups chicken broth
2 teaspoons dried parsley flakes

Prep Day: Combine rice, butter, garlic, lemon peel, pepper and chicken broth in a medium saucepan. Bring to a boil. Reduce heat. Cover and simmer for 15 minutes, until rice is tender and liquid is absorbed. Stir in parsley.

To Freeze: Cool and place in a freezer bag. Label and freeze.

Serve Day: Thaw. Heat rice in microwave, fluff with a fork and serve.
